PEANUT BUTTER ROLL CANDY 
1 med. size potato
1/4 c. evaporated milk
Dash salt
2 or 3 boxes confectioners sugar
1/2 stick butter
1 tsp. vanilla
Peanut butter as needed

Boil potato until done. While still hot, mash thoroughly and add butter, milk, vanilla and salt. Add confectioners sugar, small amounts at a time, until potato and sugar mixture is at a rolled dough stage. (Amount of confectioners sugar depends on size of potato.)

Roll out to 1/4-inch thickness on cloth which has been sprinkled with confectioners sugar. Spread evenly with soft peanut butter and roll up. Let set about 30 minutes. Slice into 1/4 or 1/2-inch pieces. Serve cold.
