MASHED POTATO FILLING 
1/2 c. butter
1/2 c. celery, chopped
2 tbsp. onion, chopped
4 c. soft bread cubes
1 pinch saffron
1/2 c. boiling water
3 eggs, beaten
2 c. milk
1 1/2 tsp. salt
2 c. mashed potatoes

Melt butter; add celery and onion. Cook until tender. Pour over bread cubes; mix. Combine saffron and boiling water. Add bread and mix well. Add remaining ingredients and mix well. Turn into 2 well greased casserole dishes. Bake at 350 degrees for 45 minutes. Makes 10 servings.
