ZUCCHINI NUT MUFFINS 
3 eggs
1 c. cooking oil
1 tbsp. vanilla
2 c. shredded zucchini, unpeeled
2 c. sugar
2 c. all purpose flour
1 1/2 tsp. baking soda
1 tbsp. cinnamon
1 tsp. salt
1/4 tsp. baking powder
1 c. chopped nuts

In medium mixing bowl, combine eggs, oil, vanilla and zucchini; mix well. Add sugar and remaining ingredients and stir until moistened. Fill paper bake cup lined muffin pans 2/3 full. Bake in preheated 400 degree oven for 15 to 18 minutes.
