OLD FASHIONED EGG CUSTARD | |
3 eggs 3/4 c. sugar 1 tsp. vanilla 1/2 stick butter (scant) 2 c. milk Bring to boil milk and butter. Pour over well beaten eggs and sugar. Beat constantly until well mixed and light. Pour into a crust, that has been baked about 5 minutes. Do NOT prick pastry before pouring custard. Bake about 10 to 12 minutes at 350 degrees, or until set. PASTRY: 1 1/3 c. sifted plain flour 1/2 tsp. salt 1/2 c. Crisco 3 tbsp. ice water, scant Cut Crisco into flour and salt, which has been placed in a bowl. Sprinkle ice water over flour mixture, mixing gently until a ball is formed. Gently roll on floured board, handling as little as possible. Place in pastry pan and bake approximately 5 to 7 minutes, to set crust, before adding hot custard. DO NOT prick pastry before baking or before adding custard. |
