STUFFED GREEN PEPPERS 
1 1/4 lb. ground beef
1 lg. onion, chopped
2 c. cooked rice
Salt to taste
1/2 c. catsup
6 or 8 sweet bell peppers
1 egg
1 qt. tomato juice

Cut tops off peppers and remove seeds; drop into boiling water for 5 minutes. Cook rice; remove from stove and add to ground beef and remaining ingredients. Stuff this mixture into the peppers, and place the peppers in a long baking dish. Put tomato catsup on top of each stuffed pepper and pour the tomato juice around the peppers. Bake 1 hour in a 350 degree oven or until most of the tomato juice is cooked into the peppers.
