ITALIAN VEGETABLE MEDLEY | |
4 c. zucchini, 1 inch cubes 1 c. coarsely chopped onion 1 1/2 c. green pepper, in 1 inch cubes 1 c. sliced carrots 1 c. diced tomato (or 1/2 qt.) 1 c. frozen peas 1 c. frozen corn 1/4 c. oil 2 tsp. salt 1/8 tsp. pepper 1/2 tsp. oregano 1 beef bouillon cube 1 c. diced potatoes Bring to a boil and put on lid. Reduce heat and simmer until vegetables are tender, 30 minutes or so. |
