POTATO CASSEROLE 
1 1/2 - 2 lb. bag O'Brien potatoes
8 oz. sour cream with chives
1 can cream of celery soup
1 can cream of potato soup
Salt & pepper to taste
Dry parsley
Grated cheddar cheese

Mix potatoes, sour cream, soups and salt and pepper well. Put in 9"x13" glass baking dish. Sprinkle with dry parsley. Thirty minutes before done sprinkle with grated cheddar cheese. Bake at 325 degrees for 1 1/2 hours or 300 degrees for 2 hours.
