MAYONNAISE CAKE | |
CAKE: 1 c. seedless raisins 1 tsp. baking soda 1 c. boiling water 2 eggs (yolks) Mayonnaise 1 c. sugar 2 c. all-purpose flour, sifted 1 c. chopped pecans FROSTING: 1 1/2 c. light brown sugar 2 egg whites 1/3 c. water 1 tsp. vanilla Pinch of salt Save 1 c. chopped pecans Put first 3 ingredients into large bowl and let stand until lukewarm. Into bottom of measuring cup put 2 egg yolks then fill to 3/4 cup level with mayonnaise. Add this to raisin mixture. Add sugar, sifted flour, chopped pecans. Mix well and pour into 3 (9 inch) pans. Bake at 350 degrees for 25 minutes. Will be dark brown when cooked. Cook frosting ingredients 7 minutes in double boiler, whipping steadily. Then add pecans and frost cake. |
