BESSIE'S BLACK BEANS | |
1 lb. black beans, dried 6 garlic cloves, cut fine 1 med. green pepper, cut fine 2/3 c. olive oil 2 bay leaves 1/2 tsp. salt 1 tbsp. vinegar 1 lg. onion, cut fine Pick over beans, removing bad ones and stones. Wash or rinse well in colander. Put in pan and cover with water allowing for absorption of water. Soak beans overnight. In morning, cook in same water soaked in, adding enough water to cover beans and then some. Place on fire; boil 1 hour. Turn fire low and add remaining ingredients, except vinegar. Cook very slowly, about 4 hours, until beans begin to thicken. Ten minutes before serving, add vinegar. Serve with boiled rice and thin slices (or chopped) onion placed on top. This is best made the day before and allowed to "set" then reheated. |
