PETITE CHERRY CHEESECAKES 
2 (8 oz.) pkgs. cream cheese, softened
2 eggs
3/4 c. sugar
1 tbsp. lemon juice
1 tsp. vanilla
Box of vanilla wafer cookies
Can of cherry pie filling

Place 1 vanilla wafer cookie on the bottom of a lined cup-cake holder. Mix remaining ingredients together and fill each cupcake holder. Bake at 375 degrees for about 20 minutes. Cool cheesecakes and top with cherry pie filling. Makes 15-20 tarts.
