CHICKEN O'BRIEN 
2 1/2 to 3 lb. chicken parts (may use all white or dark)
2 tbsp. butter
1 lg. onion, chopped
1 green pepper, chopped
2 env. chicken gravy mix
2 c. hot water

In large covered skillet, melt butter. Brown chicken; add onion and green peppers. Add gravy mix to hot water and mix well. Pour over chicken and vegetables. Bring to a boil, then reduce heat to simmer. Cover and cook 30-45 minutes. Serve over hot rice. Serves 8.
