BEETS WITH ORANGE SAUCE 
1 tbsp. butter
1/4 c. brown sguar
1 tsp. cornstarch
3/4 c. orange juice
1/8 tsp. each salt and pepper
2 1/2 c. diced cooked or canned beets, drained

Melt butter. Mix sugar and cornstarch; blend into butter. Stir in orange juice and cook until thickened, stirring constantly. Add salt, pepper and beets. Cook until beets are heated through. Sprinkle with orange rind. Yield: 6 servings.
