PEAR RELISH 
Spicy and hot. Good with meats.

4 lb. peeled & cored pears
6 med. onions, chopped
3 c. sugar
12 green peppers, chopped
3 c. cider vinegar
5 hot red peppers, chopped
2 tbsp. salt
1 1/2 tsp. celery seeds
1 tbsp. whole allspice

Combine all ingredients in a large kettle and bring to a boil. Reduce heat and simmer about 3 hours. Stir often to prevent sticking.

Ladle into hot jars and seal. Process 20 minutes in hot water bath. Makes 6 pints.
