8 med. Irish potatoes
1 tbsp. prepared mustard
3 tbsp. vinegar
1 med. onion
2 hard-boiled eggs
Salt and pepper to taste

Mash potatoes while hot. Add mustard, vinegar, onions and eggs. Mix well. Serve hot or cold.
