SPICY RICE 
1/2 c. chopped celery
1/2 c. chopped onions
1 tbsp. butter
1/8 tsp. allspice
1/8 tsp. cinnamon
1/8 tsp. salt
1 tbsp. brown sugar
3 c. cooked rice
1/2 c. raisins plumped
1 tart apple, cored and chopped
1/2 c. sliced almonds

In a large skillet cook celery and onions in butter until tender. Stir in seasonings, rice and raisins. Heat thoroughly. Stir in apple, cored and chopped. Remove from heat. Cover and let stand 5 minutes. Sprinkle with almonds.
