FRIED RIPE TOMATOES 
3 firm red tomatoes (not too ripe)
Flour
Salt
Pepper
Butter
Cris co
1/2 c. milk

Slice tomatoes at least 1/4 inch thick. Salt and pepper each slice. Roll in flour. Brown on each side in butter-Crisco mixture (1 part butter to 1 part Crisco). Remove to a platter. Add a little more butter to pan and stir in a tablespoon of flour. Add 1/2 cup milk to make a gravy. Pour gravy on top of tomatoes and serve.
