POTATO AND ONION SALAD 
4 med. potatoes
Salt and black pepper
1 lg. red onion
4 tbsp. olive oil
1 tbsp. wine vinegar
1 tbsp. parsley

Boil potatoes in their skins until tender but firm. Peel and slice thinly while still warm. Place potato slices in a glass bowl, sprinkle salt and pepper. Slice onion thinly and add it to the potatoes. In a small bowl mix oil and vinegar well with a fork. Pour this over potatoes and onions. Add parsley and toss lightly. Let stand 1/2 hour before serving.

Variation: 1 can of tuna, drained and flaked OR 1 package fully cooked sausage cut into bite size pieces, heated added with #5.
