POTATO & ONION SOUP 
1/4 c. butter
1 yellow onion, sliced
2 leeks or 1 bunch green onions
2 med. red potatoes, peeled & sliced
2 qts. water
1 tbsp. salt
1/4 c. butter
1/2 c. cream
3 tbsp. chives

In a heavy 4 quart pan melt butter and onion until wilted. Add cleaned and sliced leeks or onions, potatoes, water and salt. Bring to a boil and simmer, partially covered, for 45 minutes or until potatoes are very tender. Remove from heat and cool. If want, blend the cooked mixture until smooth. Return to the saucepan. Add butter, cream and chives. Check for seasonings, heat, but do not boil or the cream will curdle. Serves 6 to 8.
