HUNTER'S WAFFLES 
1 3/4 c. flour
2 tsp. baking powder
3 tsp. sugar
1/2 tsp. salt
3 egg yolks, beaten
1/3 c. vegetable oil
1 1/2 c. milk
3 egg whites, beaten stiff
1/4 tsp. cinnamon
Optional: 2 tbsp. finely chopped walnuts or chocolate chips

Turn on waffle iron. Measure dry ingredients into a mixing bowl. Blend. Combine egg yolks and milk. Stir in dry ingredients. Stir in cooking oil. Carefully fold in egg whites. Gently fold in walnuts or chocolate chips, if desired. Do not overmix. Pour about 2/3 cup batter onto hot griddle. Close and bake.

For healthy treat, buck wheat flour and brown sugar - no cinnamon needed in this option. Serve with warm maple syrup and butter.
