ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. oil or butter
1 tsp. vanilla
1 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
3 c. flour
2 c. grated or ground zucchini
1 c. nuts (optional - may also use 1/2 coconut and 1/2 sunflower seeds)

Beat eggs, add other ingredients, adding zucchini last. Batter will be stiff. Bake in 2 greased loaf pans or bundt pan about 1 hour and 20 minutes at 300 degrees. Self-rising flour may be used. Omit baking powder, soda and salt.
