CALABACITA CON POLLO 
1 tbsp. olive oil
1/2 fryer
1/4 bell pepper, cut in strips
1/4 sm. onion, sliced
1/2 fresh tomato, cubed or 1/2 can tomato sauce
3 cloves garlic
Ground cumin, to taste
salt and pepper, to taste
1 tbsp. flour
1 can whole kernel corn
1 small butternut or acorn squash

Wash and cut squash into cubes. Brown chicken in olive oil. Add bell pepper, onion, garlic and spices. Then add cut up squash.

Continue cooking, stirring frequently. Add fresh tomato or tomato sauce. Cover and simmer for 30 minutes. Dissolve 1 tablespoon flour in 2 tablespoons water and add. Add can of corn and cook until sauce is thickened.
