BEEF A LA RITZ 
3 1/2 to 4 1/2 lb. pot roast (flat)
1/2 lb. fresh mushrooms
1/3 c. red wine (Burgundy or Bordeaux)
heavy duty foil (18 inches wide)
6 sm. peeled onions

Line broiler pan with foil, leaving enough to seal the roast. Brown meat and vegetables under broiler. Seal carefully and bake 3 to 3 1/2 hours at 300 degrees. Add bay leaf, salt, pepper and herbs before sealing. Allow juice to simmer down in saucepan after skimming off fat.
