SWEET & SOUR TURKEY 
1 (20 oz.) can unsweetened pineapple chunks
1/2 c. brown sugar, packed
1/4 c. cornstarch
1/2 tsp. ground ginger
1/2 c. cider vinegar
1/4 c. soy sauce
1 1/4 c. green pepper strips
1 c. sliced onions
2 c. cubed cooked turkey (or chicken)
Hot fluffy rice

Drain pineapple, reserve juice. Add water to juice to make 3 cups. Combine cornstarch, brown sugar, cornstarch and ginger. Stir in juice, vinegar and soy sauce. Bring to boil, stirring constantly. Add green peppers, onions, carrots and turkey. Cover. Simmer 10 minutes or until vegetables are tender crisp. Serve with rice.
