RHUBARB JELLO CAKE | |
2 c. flour 2 1/2 tsp. baking powder 1/2 tsp. salt 1/2 c. brown sugar 1 egg 3/4 c. milk 1/2 c. shortening 5 1/2 c. rhubarb 3 oz. pkg. strawberry or raspberry Jello 1 1/2 c. sugar 6 tbsp. butter Cut 1/2 cup shortening until crumbly. Add one well beaten egg and 3/4 cup milk. Mix all together and spread in greased 9 x 13 inch pan. Spread a little on sides. Dice 5 1/2 cups rhubarb and spread over dough. Sprinkle with one 3 ounce package of strawberry or raspberry Jello. Mix 1 1/2 cups white sugar, 6 tablespoons butter, and 1/2 cup flour. Sprinkle on top. Bake at 350 degrees for 50 minutes. |
