SOPAPILLAS 
2 c. flour
3 tsp. baking powder
1/2 tsp. salt
1 tbsp. shortening
1/2 c. lukewarm water

Sift dry ingredients together. Cut in shortening until mixture looks like cornmeal. Add water gradually, stirring with a fork. Dough will be crumbly. Turn out onto lightly floured surface; knead until smooth ball is formed. Divide in half. Let stand 10 minutes. Roll each half to 10" x 12 1/2" rectangle, about 1/8" thick. Cut in 3" squares. Fry 3 or 4 squares at a time in deep fat 400 degrees about 30 seconds on each side. Sprinkle with powdered sugar. Makes 40.
