POTATO CANDY 
1 potato the size of an egg
1 box confectioners sugar
1/2 c. peanut butter

Cook potato in small amount of water until tender. Remove from water and mash fine. Mix the sugar, except 4 tablespoons into the potato. When well mixed, roll out on dough board in the remainder of the sugar. Roll to 1/8 inch thick and spread peanut butter on thinly. Then roll up like jelly roll (only thinner) and cut in slices. It may be colored with different coloring of cake colorings.
