PECAN WAFFLES 
1 1/2 c. flour
1 1/2 tbsp. sugar
2 1/2 tsp. baking powder
1/2 tsp. salt
3 eggs, separated
1 1/4 c. milk
5 tbsp. melted butter
1/4 c. chopped pecans

Sift dry ingredients; beat egg yolks until thick. Combine egg yolks with milk and butter and stir into dry ingredients. Add pecans, mixing only until blended. Beat egg whites until stiff and fold into batter. Bake in hot waffle iron. Serves 4-5 people.
