CHICKEN PICCADILLY | |
2 lbs. white meat chicken or cutlets 1 can sliced water chestnuts 1 jar India relish 1/2 c. mayonnaise, can use lo cholesterol, light, etc. Lemon to taste Pepper to taste Salt to taste Saute' chicken in oil or butter until tender, covering pan prevents drying or browning of meat. Squeeze 1/2 lemon over during simmering. Add pepper. Mix chestnuts, relish, mayonnaise together. Combine all ingredients. Salt to taste. Best when marinated overnight in refrigerator. Serve cold. For spicy version add Mrs. Dash extra spicy seasoning to taste. |
