WEIGHT WATCHERS LEMON CHEESE
BARS - MICROWAVE
 
1/2 c. reduced-calorie tub butter
1/4 c. + 2 tbsp. brown sugar, firmly packed
1 1/2 c. all-purpose flour
3 oz. quick oats
10 oz. reduced calorie cream cheese
1/4 c. skim buttermilk
1 lg. egg
2 tbsp. lemon juice
2 tbsp. shredded coconut, toasted

1. To prepare crust, in medium bowl, combine butter and 1/4 cup of the sugar. With mixer on low speed, beat until creamy. Add flour and oats; beat until blended.

2. Press mixture into bottom of an 8 inch square pan. Microwave on medium for 4-6 minutes, turning pan once, until dry around edges; set aside.

3. Place cream cheese in small bowl. Microwave on medium for 40 seconds, until softened. Stir in milk, egg, and lemon juice; mix well. Spread over crust. Place remaining sugar in small sieve; tapping sieve gently, sprinkle sugar evenly over filling. Sprinkle with coconut. Microwave on high 6-10 minutes, turning dish once, until firm in center.

4. Cool completely on rack. Refrigerate at least 2 hours before cutting into 12 equal bars.

Each serving is 205 calories.

Since microwave ovens vary in power, you may need to adjust your cooking time.
