GREEN BEANS & ARTICHOKES 
3 c. fresh green beans (1 inch pieces)
1 c. celery, cut on slant
1/2 c. thinly sliced onion
1 c. Jerusalem artichokes
1/2 c. sour cream
1/4 c. mayonnaise
1/4 tsp. curry powder
Salt & pepper
Chopped fresh parsley

Preheat oven to 300 degrees. Combine green beans, celery and onions with small amount of boiling water in saucepan. Cover and simmer for 10 minutes or until tender. Stir in artichokes and turn into shallow casserole. Set aside.

Mix sour cream, mayonnaise, curry powder, salt and pepper; add to casserole. Bake uncovered at 300 degrees for 15 minutes or until very hot. Garnish with parsley. Serves 6 to 8.
