CRISPY BAKED FILLETS 
1 lb. fish fillets
Black pepper
2 tbsp. oil
1/3 c. corn flake crumbs

Wash and dry fillets. Cut into serving pieces. Season with pepper. Dip in oil. Coat with corn flake crumbs.

Arrange in single layer in lightly oiled shallow baking dish. Bake at 500 degrees for 10 minutes without turning or basting. This method produces a crisp coating. Yields 4 servings. 260 calories.
