CREAMY RICE PUDDING 
1/2 c. reg. rice (not converted)
2/3 c. sugar
1 tsp. vanilla
1/2 tsp. salt
1 qt. milk
2 eggs

In large heavy saucepan combine rice, sugar, vanilla, salt and milk. Cover and bring to a simmer over medium heat. Simmer mixture until rice is very tender, about 40 minutes. Remove from heat.

Beat eggs. Slowly pour about 1/3 of rice mixture into eggs, stirring to mix. Pour the egg mixture back into the saucepan. Over low heat stirring constantly until thickens enough to coat spoon, about 1 minute.
