HAM & POTATO SCALLOP 
1 1/2 lb. potatoes
1/4 c. onion, minced
1/4 c. bell pepper, chopped
2 tbsp. butter
3 tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
1/2 tsp. dry mustard
1 1/2 c. milk
1 c. sharp cheddar cheese, grated
1 1/2 c. cooked ham, diced

Peel and slice potatoes; set aside. Saute onion and pepper in butter. Blend in flour and seasonings. Gradually add milk, cook and stir until sauce thickens. Blend in 3/4 cup cheese. Save remainder for topping.

In a greased 2 1/2 quart casserole dish, alternate sliced potatoes, ham and cheese sauce. Cover and bake at 350 degrees for 1 hour. Remove cover, sprinkle top with remaining cheese and bake 15 minutes longer or until cheese melts and potatoes are tender.
