JEROME'S APPLE CAKE 
3 eggs
1 c. vegetable oil
1 c. sugar
2 c. self-siring flour
1 tsp. cinnamon
1/2 tsp. nutmeg
3 c. tart cooking apples, peeled, cored and diced
1/2 c. raisins
1/2 c. chopped walnuts (optional)

1. Heat oven to 350 degrees.

2. In a large bowl beat together eggs, oil and sugar with electric mixer until smooth.

3. Sift flour and spices together, reserving 1 tablespoon.

4. Gradually add dry ingredients to liquid. Continue mixing until well blended and smooth. Toss apples, raisins and walnuts with the tablespoon of flour. Then fold into mixture.

5. Lightly grease and flour bundt pan. Pour in cake batter.

6. Bake 50 to 55 minutes or until cake tester comes out clean.

7. Cool completely before removing from pan.

This cake is good alone. Or with vanilla ice cream or whipped topping.
