SALMON LOAF 
1 lb. can pink salmon
3 tbsp. butter
3 tbsp. flour
Salmon liquid plus enough milk to make 1 c.
1/2 tsp. salt
1/4 tsp. pepper
2 tbsp. onion, minced
2 c. cracker crumbs
1 egg, beaten

Drain salmon, save liquid. Remove skin and bones. Make white sauce by blending butter with flour over medium heat. Add salmon and liquids and cook, stirring frequently. Add seasonings. Mix sauce with salmon and remaining ingredients. Shape into loaf and place in greased loaf pan. Bake, uncovered, in preheated 350 degree oven for 1 hour. Serves 4-6.
