SOUTHERN BANANA PUDDING 
1 pkg. (4 serving size) Jello pudding & pie filling, banana cream, French vanilla or vanilla flavor
2 egg yolks, slightly beaten
2 1/2 c. milk
25 vanilla wafers
2 lg. bananas, sliced
2 egg whites
1/4 c. sugar

Combine pudding mix, egg yolks and milk in medium saucepan. Cook and stir over medium heat until mixture comes to full boil. Remove from heat. Arrange layer of vanilla wafers on bottom of 1 1/2 quart baking dish. Add layer of banana slices and pudding mixture. Continue layering wafers, bananas and pudding, ending with pudding.

Beat egg whites until foamy. Gradually beat in sugar, continue beating until stiff peaks form. Spoon over pudding sealing edges well. Bake at 425 degrees for 5 to 10 minutes or until meringue is lightly browned. Serve warm or chill until ready to serve. Makes 8 servings.
