OLD FASHIONED HONEY WHEAT BREAD 
1 1/2 c. water
1 c. cottage cheese
1/2 c. honey
1/2 stick butter
5 1/2 to 6 c. unbleached flour
1 c. wheat flour
2 tbsp. sugar
2 tsp. salt
2 pkg. dry yeast
1 egg

Heat first 4 ingredients in medium pan until very warm (120 to 130 degrees). Lightly spoon flour into measuring cup. combine warm liquid and flour and remaining ingredients in a large bowl. Let it rest 25 minutes. Knead dough on well-floured surface until smooth and elastic, about 5 minutes. Place in greased bowl. Cover with tea towel. Let rise in warm place until light and doubled in size, 45 to 60 minutes.

Grease 2 (9 x 5) loaf pans. Punch down dough. Divide and shape into two loaves. Place in pans. Cover, let rise in warm place until light and doubled in size, 45 to 60 minutes.

Heat oven to 350 degrees. Bake 40 to 50 minutes until deep golden brown and loaves sound hollow when lightly tapped. Immediately remove from pans. makes great toast. I double this recipe and either give away or freeze what we don't need at the moment. Can slice before freezing. When I double the flour, I use 8 cups unbleached and 4 cups whole wheat.
