COOL - RISE BREAD 
5 - 6 c. flour
2 tbsp. sugar
1 tbsp. salt
2 pkg. Fleischman's yeast
1/4 c. (1/2 stick) butter
2 1/4 c. very warm water

Combine 2 cups of the flour, sugar, salt and yeast in large bowl. Mix well. Add softened butter and hot water. Beat with electric mixer at medium speed for 2 minutes. Scrape sides of bowl often with rubber scraper. Add 1 more cup of flour; beat with mixer for 1 more minute. Scrape sides of bowl. Stir in remaining flour. Use just enough flour so that the dough leaves the sides of the bowl. Turn the dough onto a board with a little flour on it. Flour your hands and knead the dough until it is smooth and springy (10 to 15 minutes). If baking same day, do not store in refrigerator.

Leave dough on board and cover with plastic wrap and towel. Let rest for 30 minutes. Now punch down the dough and shape into loaves for bread or rolls. At this point, you can make doughboys by frying dough in oil. Brush bread with oil and cover with plastic wrap. Store in refrigerator for 2 to 25 hours. Remove from refrigerator 10 minutes before baking. Bake bread in hot oven (400 degrees) about 30 to 40 minutes.
