COOL-RISE WHITE BREAD 
6-7 c. flour
2 tbsp. sugar
1 tbsp. salt
2 pkgs. dry yeast
1 stick butter, softened
2 c. very hot tap water
Cooking oil

In a large bowl, mix 2 cups flour, sugar, salt and yeast. Add butter. Gradually add water. Beat 2 minutes. Add 1 cup flour, beat 2 minutes at high speed. Stir in enough flour to make a soft dough. Knead 8-10 minutes. Put in a bowl, greased with oil, cover with plastic wrap and a towel. Let rest for 20 minutes.

Punch down dough. Divide in half, shape into loaves. Place in 2 greased loaf pans (8 1/2 x 4 1/2 x 2 1/2 inches). Brush with oil. Cover pans, loosely with plastic wrap. Refrigerate 2-24 hours. When ready to bake, uncover dough and let stand 10 minutes. Bake 30-40 minutes in hot oven at 400 degrees.
