BAKED SQUASH 
7 sm. yellow summer squash
1 sm. onion, diced
1/4 c. crushed saltines
1/2 c. cream
2 tbsp. butter
1 c. bread crumbs

Slice squash, boil in salt water until fork can be inserted. Drain and mash. Saute onion, crackers, and cream in 2 tablespoons butter. Add to squash. Pour into greased casserole and top with butter and a few bread crumbs. Bake at 400 degrees about 1/2 hour. Makes 10 to 12 portions.
