LIGIA'S PORTUGUESE ROAST BEEF | |
3-4 lb. roast 8 sm. potatoes 1 tsp. garlic salt 1 tsp. ground black pepper 1 tsp. salt 1 c. red or white wine 1 onion, sliced Parsley, to taste 1 bay leaf 6 whole cloves 6 whole pepper 1 cinnamon stick 1 tsp. paprika 1 block butter (1/2 c.) Make a marinating sauce with the wine, garlic salt, pepper (ground) and salt. Place meat in this sauce for 3-4 hours. Place meat in roast pan with whole potatoes, cover meat with 1 block of butter. Roast until brown. Remove potatoes and add slices of onion and the rest of the spices. Pour marinate sauce over meat. Add 1-2 cups of water if needed. Salt to taste. When meat is almost done place potatoes back into pan and cook until potatoes and meat are done. |
