MORMOR'S GINGER SNAPS -
PEPPARKAKOR
 
10 tbsp. (5 oz.) butter
1 c. sugar
1/4 c. dark molasses
1/2 c. water
1/2 tbsp. ginger
1 tbsp. cinnamon
1/2 tbsp. cloves
1 tsp. cardamom (ground)
1/2 tbsp. baking soda
3 c. flour

Work butter, sugar and molasses until smooth. Add water, spices, baking soda and flour. Blend thoroughly and knead on baking board. Chill overnight. Roll out and cut with fancy cutters, animals, hearts, trees, etc. Place on greased baking sheet and bake in slow to moderate oven, 325 degrees for 5 to 10 minutes. Let cool on flat surface. Yield: 200 cookies.
