REFRIGERATOR BRAN MUFFINS 
2 c. 100% Bran cereal
1 c. boiling water
4 eggs
2 c. sugar
1 c. cooking oil
1 qt. buttermilk
4 c. quick oatmeal
5 tsp. baking soda
1 1/2 tsp. salt
5 c. all-purpose flour
1 c. raisins (optional)
1 c. dates (optional)
1 c. nuts (optional)

Stir together bran cereal and boiling water; set aside to cool. In a large bowl, beat eggs, stir in sugar, oil, buttermilk and oats. Mix flour, salt and soda in another bowl. Add to egg mixture, then gently stir in cooled bran mixture and raisins, dates, nuts. Fill baking cups 2/3 full. Batter may be stored in refrigerator for up to 1 month. Makes 4 or 5 dozen muffins. Bake at 400 degrees for 18-20 minutes.
