SLIM AND HEALTHY CHICKEN 
3 1/2 lb. chicken pieces, skinned
3 tbsp. fresh lemon juice
2 tsp. dried basil
3 med. sized scallions, cut in 1" diagonal pieces, or about 1 c.
1 lg. zucchini, quartered
2 med. sized carrots, peeled & cut lengthwise
1 (9 oz.) pkg. frozen artichoke hearts, thawed

Heat oven to 350 degrees. Place chicken pieces in 12 x 8 x 2 inch dish. Sprinkle lemon juice and basil. Scatter onions on top. Arrange zucchini, carrots, artichoke hearts on top of chicken. Bake covered 45 minutes at 350 degrees or until vegetables are tender and chicken is cooked through.
