ENGLISH MUFFIN BREAD 
1 pkg. dry yeast
1 1/4 c. warm water
1 tbsp. sugar
1/2 tsp. salt
1 tbsp. cornmeal
2 1/2 to 3 c. flour

Mix yeast with 1 cup flour. Heat water, sugar and salt until warm. Mix liquid with flour and yeast until blended. Add the remaining flour 1/2 cup at a time until soft dough is formed. Place in large greased bowl; cover and let rise in a warm place for 1 hour.

Punch the dough and let rest for 10 minutes. Place dough in a greased casserole sprinkled with 3/4 tablespoons cornmeal. Sprinkle the top of the bread with the remaining cornmeal. Let rise for 1 hour. Bake in a 400 degree oven for 45 minutes. If the top browns too quickly, cover with foil.
