EASY ENGLISH MUFFIN BREAD | |
2 pkgs. active dry yeast 6 c. unsifted flour 1 tbsp. sugar 2 tsp. salt 2 c. milk 1/4 tsp. baking soda 1/2 c. water Cornmeal Combine 3 cups flour, yeast, sugar, salt, and soda. Heat milk and water to very warm, about 125 degrees. Add to dry mixture; beat well. Stir in rest of flour to make a very stiff batter. Spoon into 2 (8 x 4 1/2 inch) pans that have been greased and sprinkled with cornmeal. Sprinkle tops lightly with cornmeal. Cover; let rise in warm place for 45 minutes (a heating pad set on low is an excellent even heat for rising). Bake in 400 degree oven for 25 minutes. Remove from pans immediately and cool. Makes excellent toast the next day. Microwave Directions: Reduce flour by 1 cup to 5 cups. Microwave 6 1/2 minutes per loaf. Let rest for 5 minutes before removing from glass pans! |
