CRISPY CRUMB FRIED CHICKEN 
2/3 cups finely crushed herb-seasoned stuffing mix
3/4 tsp salt
1/4 tsp pepper
1/4 tsp paprika
1 frying chicken (2 1/2-3 lbs) cut up, or chicken pieces
1/2 cup Crisco shortening

Combine stuffing mix, salt, pepper & paprika on waxed paper. Moisten chicken with water & coat with crumbs. Heat Crisco to 365°F (in electric skillet or on medium high in large heavy skillet. Fry chicken, turning once for even browning reduce heat to medium low. Cook chicken until tender. Turn once for even browning. Drain on paper towels. 4 servings.

Tips: Always add chicken skin side down for a crisper, browner chicken. When the first side is brown, turn & brown the second side. Try to avoid turning more than once.
