RAISED CORNMEAL MUFFINS 
1 pkg. dry yeast
1/4 c. warm
2 c. scalded milk
1 c. cornmeal
1 tsp. salt
1/2 c. sugar
1/2 c. shortening
2 eggs
4 - 4 1/2 c. flour

Soften yeast in warm water. Pour scalded milk over cornmeal, salt, sugar and shortening. Beat in eggs and 2 cups flour. Add yeast mixture. Mix well. Add remaining flour to make a heavy batter. cover and let rise to double. Bake at 400 degrees for 15 to 20 minutes. Brush with melted butter.
