STRAWBERRY SHORTCAKE 
2 c. flour
1/2 tsp. salt
4 tsp. baking powder
1 tbsp. sugar
1/3 c. butter
1 egg, well beaten
1/2 c. milk
1 pt. strawberries
Whipped cream

1. Sift dry ingredients. Mix in butter until mixture is like coarse crumbs.

2. Combine egg and milk and stir into flour and butter mixture. Mix until just moistened.

3. Turn out onto a slightly floured surface. Divide dough in half. Pat out to fit an 8" cake tin. Brush with melted butter. Repeat with second half.

4. Bake in a 450 degree oven for about 15 minutes.

5. Stem and quarter the strawberries. Spread half the whipped cream and half the strawberries between the layers and the remaining cream and strawberries over the top. Serve hot. Serves 6.
