CRANBERRY-ORANGE RELISH | |
2 cans whole cranberry sauce (not jellied) 3 Baldwin (not McIntosh) or hard apples 2 thin skinned oranges (not navel) Lemon juice 2 c. water Peel apples and take core and seeds out. Cut into bite sized pieces. throw into a small saucepan with 2 cups water. Wash oranges and cut into small bite sized pieces (don't include core and seeds). Add to apples and water. Cook together (approximately 1/2 hour) until orange is soft but not mushy, at low boil. Add water if necessary, but make sure it's boiled water. Add 2 cans cranberry sauce and lemon juice (to taste). Cook approximately 1/2 hour. After about 1/2 hour it should be on the thick side, this is your preference. After mixture cools off, store in refrigerator. |
